Black eyed peas for New Year's Day
On New Year's Day, it's a tradition in our family to have black eyed peas for luck and something green (usually cabbage) for money/wealth in the coming year. This year Mama also made a batch of Texas Caviar, which has black eyed peas and green peppers in it. It's pretty tasty stuff. 2 - 15 ounce cans black-eyed peas, drained
1 - 15 ounce can whole kernel corn, drained
1 - 10 ounce can Ro-Tel tomatoes
1 cup chopped red bell pepper
1 cup chopped green bell pepper
1/2 cup chopped fresh jalapeno peppers (more if you like it hotter)
1/2 cup chopped onion
1 - 8 ounce bottle Italian salad dressing
1 - 4 ounce jar chopped pimentos, drained
Combine all the ingredients in a large bowl, stir gently to combine, and refrigerate overnight. Serve with corn chips. This keeps in refrigerator 2 weeks. (That is if you don't eat it all the first time you serve it.)
